Soba’s history in Japan dates back to at least the 8th century of the Nara period, if not hundreds of years earlier. At this time, the soba was eaten not as a noodle but more like a boiled dumpling or a cracker. The modern noodle form of soba, known as soba kiri (cut soba), dates back to the 16-17th centuries of the Edo period.
